Nestlé Fitness® Carrot and Whole Grain Mini-Muffins

Mmmm….put the kettle on! These moist and fruity muffins are great for a mid-afternoon nibble.

Ingredients

  • 2 eggs
  • 3.5 tbsp orange juice
  • 2 tbsp raw cane sugar
  • 2 tbsp olive oil (1 tbsp for mix, 1 tbsp for muffin tin)
  • 2 carrots
  • 20 g dried cranberries
  • 1 zest from orange
  • 90 g FITNESS® cereals
  • 200 g flour
  • 50 g cornstarch
  • 1 packet yeast
  • 1 pinch salt
  • 0.5 tsp allspice

Instructions

  • Preheat the oven to 190 °C.
  • Mix eggs, orange juice, sugar, and olive oil.
  • Peel and grate carrots.
  • Add them to the mixture along with the cranberries and orange zest.
  • Coarsely crush the cereal by hand.
  • In a mixing bowl, mix together flour, cornstarch, salt, spices, and cereal and add it all to the wet ingredients.
  • Stir it all until it is evenly combined.
  • Pour batter in greased muffin tins and bake for 20 min.
