# Pecan Cornflake Crunch Granola

A crunchy gluten-free granola made with oats, cornflakes, seeds, pecans and desiccated coconut bound by a flaxseed-chia gel and lightly flavored with vanilla and cinnamon. The granola is baked in loose clumps until crisp, then mixed with cornflakes after cooling for extra crunch.

## Preparation

Preheat the oven to 150C fan and line 1-2 large trays with non-stick baking paper.

In a jug, combine the flax, chia and 80ml boiling water; stir and stand for 10 min to create a gel.

Combine all dry mix ingredients, except the cornflakes, in a large mixing bowl. Stir vanilla and olive oil into the gel, then pour over the dry bowl and mix very thoroughly until evenly damp and clumping.

Spread in loose clumps on the trays (don’t press flat). Bake for 35-45 min, gently turning halfway and adding the cornflakes on top, don’t mix them in, we’ll do this once everything is fully cooled.

Switch oven off and leave door ajar 10-15 min to dry. Cool completely - it crisps as it cools. Gently mix in the cornflakes to the rest of the granola on the tray.

Store a jar and enjoy a portion of 45g with 0% Greek yoghurt and fresh berries.
