## Ingredients

- 2 Shredded Wheat biscuits finely crumbled
- 300g plain flour
- 200g unsalted butter, cold
- ½ tsp cayenne pepper
- Pinch of salt
- 100g grated cheddar cheese
- 3-5 tbsp cold water, as needed
- 40g parmesan
- 2 eggs
- 50g pesto, to serve (optional)
 


 

## Preparation

 1.Rub Butter and Flour

    5min 

 

 

Use your hands to rub the butter with the flour until it resembles fine breadcrumbs.



 

 

 





 2.Prepare Dough

    30min 

 

 

Mix in the grated cheese, crumbled Shredded Wheat, the salt and cayenne pepper. Add 1 of the eggs and then the water a little at the time (only use what you need), using your hands to bring everything together to a firm dough. Wrap the dough and chill in the fridge for 30 minutes.



 

 

 





 3.Roll and Cut Dough

    10min 

 

 

Divide the dough in half, then 1 piece at a time, roll the dough out on a lightly floured surface into a rough square approximately 1cm thick. Use a knife or roller cutter to slice the dough into 18 strips roughly 2cm wide.



 

 

 





 4.Prepare and Season Strips

    5min 

 

 

Twist each strip a few times and place onto a lined baking tray, brush with the remaining beaten egg. Then sprinkle over the grated parmesan.



 

 

 





 5.Bake

    15min 

 

 

Bake in a preheated oven at 180°C/160°C fan/gas mark 4 for 15 minutes until crisp.
