The Cheerios® Mocha Cheesecake is a tasty treat to share with friends and family! This recipe is a great showstopper to wow your guests after a special meal.

Ingredients

  • 150g Cheerios Multigrain Cereal, very finely crushed
  • 100g buttery baking spread, melted
  • 80g honey
  • 1 tsp vanilla extract
  • 50g finely grated quality dark chocolate (min 70% cocoa solids)
  • 3 tbsp instant coffee, dissolved in a little boiling water
  • 300g low fat cream cheese
  • 250ml double cream

Preheat the oven to 180 degrees C

Combine the crushed Cheerios with the melted buttery baking spread and press firmly into the base of a 20cm springform tin

Bake in the oven for up to ten minutes until golden. Set aside to cool.

Combine the coffee, honey and vanilla extract to form a sweetened, strong coffee

Using a whisk or a mixer with whisk attachment, beat the low fat cream cheese to loosen it, and then slowly add the double cream and continue to whisk until medium peaks appear

Stir in the coffee mixture and the grated chocolate

Pour the mix onto the Cheerios and place in the refrigerator for at least two hours

Unmould and then garnish with a selection of:
a) (seasonal) Kit Kat Easter Bunnies/chocolate mini-eggs OR
b) additional grated chocolate or perhaps some figs
